Coconut Chocolate Coffee Muffin Recipe, Reduces the Risk of Infecting Covid-19

Coconut chocolate coffee muffin recipe. Indonesian Food

Material:

  • 115 gr cream cheese, melted
  • 3 tbsp sugar
  • 2 tbsp all-purpose flour
  • 1 large egg at room temperature
  • 170 gr semi-sweet chocolate chips, divide
  • 60 gr sweet grated coconut
  • 55 g chopped pecans, toastet

Dough Material:

  • 190 gr all-purpose flour
  • 195 grams of packaged brown sugar
  • 30 g of baked chocolate

  • 80 gr brewed coffee, room temperature
  • 70 ml canola oil
  • 2 tbsp cider vinegar

How to make coconut chocolate coffee muffins:

1 Preheat the oven to 175 degrees Celsius. In a small bowl, beat cream cheese, sugar and flour until smooth. Add eggs, beat. Add 130 grams of chocolate chips.

Stir the coconut and pecans, and the remaining chocolate chips in another bowl. Set aside.

2 Whisk the first five ingredients in a large bowl. Take another bowl, mix the coffee, oil and vinegar and add to the dry ingredients. Stir well until thickened.

3 Pour the batter into the parchment-lined muffin tins until they are half full.

Add a tablespoon of cream cheese mixture in the center of each muffin. Then, sprinkle with a tablespoon of coconut mixture.

4 Bake until cooked, about 20-25 minutes. Cool five minutes before removing from pan to wire rack to cool. Serve warm.
