Goat curry ingredients and spices

  • 500 gr goat ribs
  • 12 cloves of red onion
  • 10 cloves of garlic
  • 1 tsp coriander
  • 1/2 tsp pepper powder
  • 1 tsp cumin
  • 10 hazelnuts
  • 15 cm cinnamon
  • 15 cloves
  • 9 grains of cardamom
  • 3 finger ginger
  • 3 segments of turmeric
  • 1 segment of laos galangal
  • 1 segment kencur
  • 5 stalks of lemongrass leaves
  • 5 lime leaves

How to make Goat Curry

  • First, boil the goat ribs in boiling water until cooked. When you see white bubbles, remove them immediately as they can give the meat a fishy smell.
  • Meanwhile, puree the ginger, cinnamon, ground pepper, coriander, shallots, garlic.
  • After the spices are smooth, add the galangal, laos, lemongrass, and lime leaves, do not crush.
  • Saute the ground spices with the addition of lemongrass, lime leaves, galangal, cloves, and cardamom. Stir until the spices are completely evenly distributed.
  • After smelling good smell, add cinnamon. Saute again while adding water.
  • If the seasoning is cooked, mix it in the stew of goat ribs and the gravy. Stir until evenly distributed.
  • Then, cook the curry over medium heat until the gravy shrinks which means that the spices are absorbed.
  • Goat curry is ready to be served.
  • Goat curry is best eaten when the sauce is still hot with white rice that is also hot. The strong taste of spices, tender meat, and pervasive spices certainly makes goat curry a dish that has many fans.
